Chickpea Flour Balls
These gluten-free "balls" are absolutely loaded with flavor that explodes from just one bite: Cardamom, coconut, and, my favorite, chickpea flour. My kids love to eat these as after-school snacks or before or after soccer games, which is when they most need energy. I even serve them as vegan desserts after dinner sometimes!

Ingredients
- 1/4 cup chickpea flour
- 1 tablespoon shredded coconut
- 1 tablespoon cacao butter (softened)
- 1 tablespoon ground pistachio (unsalted)
- 1 tablespoon ground almonds
- 1/4 teaspoon cardamom powder
- 2 tablespoons coconut sugar
- 1 tablespoon goji berries
- Salt
- 1 tablespoon unsweetened coconut milk
Instructions

Soak goji berries in hot water for 10 minutes. Drain and set aside.

Add chickpea flour to pan and dry roast for 3-5 minutes on low heat, stirring occasionally.

Continue roasting on low heat, then add coconut, cocoa butter, pistachios, and ground almonds, mixing well.

Roast until mixture turns deep brown color (about 10 minutes).

Add cardamom, sugar, goji berries, and salt. Roast for another 2 minutes.

Turn off heat and sprinkle coconut milk on mixture and mix well.

Cool at room temperature until ready to handle by hand.

Using teaspoon or melon scooper, scoop out mixture and roll into balls.

Press 1 goji berry into top of each ball.

Store balls in airtight container at room temperature until ready to serve.
