Irish Soda Bread
With St. Patrick's Day on the horizon, I wanted to put my own vegetarian or vegan spin on traditional Irish foods for this fun-filled holiday. First up: Irish Soda Bread! The rolled oats and fresh chives really set this recipe apart.

Ingredients
- 1 cup unsweetened almond milk
- 1 tablespoon lemon juice
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1 cup whole wheat flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons nutritional yeast
- 2 tablespoons fresh chives (finely chopped)
- Vegan butter
Instructions

Preheat oven to 450 degrees F.

Lightly coat baking sheet with nonstick cooking spray and prepare well-floured cutting board.

In small bowl, mix almond milk and lemon juice, then set aside for 10 minutes. The mixture will curdle.

In large bowl, whisk together flours, oats, baking soda, and salt.

Make well in center of dry mixture and pour in milk mixture, nutritional yeast, chives, and salt, stirring well to incorporate.

Using hands, turn dough onto well-floured surface and knead 4-5 times.

Form dough into round loaf shape and place on prepared cookie sheet.

Score loaf by cutting 1/4-inch "X" shape on top.

Bake loaf for 15 minutes at 450 degrees F.

Bring temperature down to 400 degrees F and bake for additional 15 minutes.

Cool on wire rack.

Serve vegan butter.
