Lentil Veggie Burgers

This is a great weekend cooking recipe. I like to batch cook these burgers over the weekend and freeze them and so they can be an amazing weeknight dinners too, and I often serve them with my Perfect Potato Wedges!

Ingredients

  • 3/4 cup brown lentils (rinsed, strained, picked through)
  • 1 3/4 cups low-sodium vegetable broth
  • 2 teaspoons extra virgin olive oil
  • 1 large red onion (half finely chopped)
  • 1/2 lemon (juice)
  • Salt and pepper (to taste)
  • 8 ounces fresh baby spinach
  • 1 cup carrots (diced)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon ground cumin
  • 1 cup gluten-free rolled oats
  • 1/2 cup walnuts (toasted, finely chopped)
  • Cooking spray
  • 6 vegan hamburger buns
  • Lettuce (optional, for serving)
  • Tomato (optional, for serving)
  • Onion (optional, for serving)
  • Spicy mustard (optional, for serving)

Instructions

  1. In medium saucepan, bring lentils and 1 3/4 cups broth to boil over high heat. 

  2. Reduce heat to medium-low, partially cover, and simmer until lentils are fully softened and liquid is absorbed (about 30 minutes). 

  3. Transfer to medium bowl and mash well with potato masher. Set aside.

  4. In large nonstick skillet, heat oil over medium heat. 

  5. Add chopped onion, lemon juice, and 1/4 teaspoon salt, and cook, stirring, until softened (about 6 minutes). 

  6. Add spinach, carrots, garlic, black pepper, and cumin, and stir until spinach is wilted (about 3 minutes).

  7. Add spinach mixture, rolled oats, walnuts, and salt to lentils, then mix thoroughly. 

  8. Cover and refrigerate for at least 1 hour or overnight.

  9. Preheat grill to medium-high. 

  10. Form mixture into six patties and spray with cooking spray on each side. 

  11. Grill until nice grill marks form (about 5 minutes per side). 

  12. Place patties in buns with sliced onion and other toppings as desired, then serve immediately.
