by CHLOE

The following review is from fellow foodie and vegan, Cass Palmer!
As soon as you walk into any by CHLOE location, you feel a sense of excitement and inspiration because of the uniquely beautiful décor and creative branding. Like many NYC eateries, the environment is fresh and artistic.
As you step up to the counter to order your meal (which is brought to you minutes after ordering) you’re met with an array of choices, from salads to pastas to burgers. Even if it’s not within brunch hours you can get a glimpse at their breakfast-style offerings, including pancakes, smoothie bowls, hash browns, and more. Until you read the menu descriptions, you’d have no idea that these deliciously named listings are 100% vegan. You wouldn’t be able to tell by the looks of the food, either.
So, let’s get to the details. What should you order?
I’ve had the privilege of dining at by CHLOE a few times now and I have yet to be disappointed. One of my favorites has been their Mac N’ Cheese. The pasta and ultra-creamy sweet potato cashew cheese sauce are topped
with crispy shiitake mushroom “bacon” and sprinkled with almond parmesan. I don’t care if you’re a vegan or not, this dish is freaking good. Another favorite of mine is the Spicy Thai Salad. This bowl of nutritious, green goodness includes shredded kale, chopped romaine, flavorful apricot-Sriracha glazed tempeh (vegan soy protein), almonds, quinoa, edamame, scallion, crispy wontons, and peanut dressing. Yes, it’s a salad, but it’s so jam-packed with flavor that you’ll be craving salads for the next month.
I forgot to mention that by CHLOE has an extensive lineup of vegan dessert options as well. I have yet to try any, but they taunt me every time I visit the restaurants or see them on my Instagram feed. By CHLOE is one of my favorite restaurants in New York City, and I’m excited to go back and take both my vegan and non-vegan friends to enjoy their delicious items.
