Aix-en-Provence in the south of France has an abundance of great restaurants, even Michelin-starred ones! It’s always great to find a local spot that you can just walk right into and have an amazing meal with local ingredients. Mitch is a real gem and quite popular with locals, and they were able to accommodate my vegan diet with items that weren’t even on their menu, like this salad with local asparagus, peas, greens, shaved carrots, and sweet potato. It was beyond delicious — the crunchiness and flavors were so well-balanced! For my main course, I had fried and whipped carrots garnished with cauliflower and green pea mousse. Talk about “bon appétit!”
