Tamarind Okra Fries
Baked and paired with tamarind, this okra recipe is simply irresistible and a house favorite. My kids call them fries, and often try to pass them off as their greens requirement for the day!

Ingredients
- 1 lb fresh okra
- 1 tablespoon olive or coconut oil
- 2 tablespoons tamarind concentrate or paste
- Salt
Instructions

Preheat oven to 400 degrees F.

Line cookie sheet with parchment paper.

Rinse okra and drain on kitchen towel.

Rub okra between layers of towel and let air dry for 30 minutes. Okra should be dry before using or else it will be slimy and hard to work with!

Trim away okra stem ends and cut tips very thin.

Place okra in large bowl and add olive oil, tamarind, and salt, and toss until coated well.

Using slotted spoon, lift okra from bowl, leaving behind any excess oil, and place on prepared cookie sheet in single layer.

Bake in oven until lightly brown and a bit crispy (about 25 minutes). If you like it crispier, bake for another 10 minutes.

Transfer to platter and serve immediately.
