CURRIED TOFU SCRAMBLE WITH SPINACH (INDIAN STYLE)

Need a delicious meal for breakfast, brunch, or whenever you have a craving for something quick and healthy?  Look no further than this Curried Tofu Scramble with Spinach! It's nutritious, vegan, protein packed, and yummy!

Ingredients: -Onions -Bell Peppers  -Mushrooms  -Kale or spinach  -Cilantro -Spices

STEP 1: SAUTE THE VEGETABLES -Sauté the onions.  -Add the sliced mushrooms and diced red peppers. -Cook for about 5-7 minutes.

STEP 2: PREPARE THE TOFU -Add the pressed and drained tofu.  -Break up and sauté until hot, about 2-3 minutes.  -Pour the seasoning mixture and toss until each piece is coated well.

STEP 3: ASSEMBLE THE VEGETABLES & TOFU -Combine the veggies, tofu, and the kale or spinach.  -Cover the pan and cook until the greens have wilted, about 5 minutes or so. 

STEP 4: ENJOY! -Top with chopped cilantro and serve immediately!
