EASY VEGAN SABUDANA (SAGO) KHICHDI PILAF RECIPE

Perfect combination of flavors and textures, this Easy Sabudana Khichdi Recipe is made with sabudana (tapioca pearls or sago pearls), potatoes, and a flavorful combination of spices like cumins seeds, ginger, coriander leaves, and green chilis

INGREDIENTS FOR EASY SABUDANA KHICHDI

2 cups sabudana 1½ cups water 1 cup peanuts, raw preferable 2 teaspoons coconut sugar 1½ teaspoons salt 4 tablespoons olive oil 2 teaspoons cumin A few curry leaves 2 inch piece of ginger, finely chopped 4 green chilis, finely chopped 4 tablespoons coriander, finely chopped 2 medium-sized potatoes, boiled, peeled & cubed 1 lemon juiced Cilantro chopped for topping

Sabudana (Sago or Tapioca Pearls) Peanuts, Coconut sugar Olive oil, Cumin seeds, Curry leaves, Ginger, Green chilis, Coriander, Potatoes, Lemon, and  Cilantro leaves.

Five Steps and you will have this Healthy and Easy Sabudana Khichdi on the table.

Prepare the sabudana

Rinse and soak sabudana pearls for 4-6 hours.

Prepare peanut powder

Roast peanuts until aromatic.  Set them aside to cool. Pulse in the food processor to a fine powder consistency

Mix prepared sabudana and prepared peanuts

Add the peanut powder, sugar, and salt to the soaked sabudana and mix well. Set aside for now.

Sauté the spices and the potatoes

Saute potatoes with spices and cook well for 2-3 minutes.

Mix cooked potatoes and sabudana mixture

Gently mix potatoes and sabudana and lemon juice.  Garnish with cilantro leaves.  

Leftovers can be stored in the refrigerator in an airtight container for up to 3 days.

To re heat in microwave - sprinkle a bit water and add a damp paper towel on top of the Sabudana Khichdi, heat until fully heated through.
