VEGAN BUDDHA BOWL: BROWN RICE & EDAMAME

Easy and delicious Make ahead lunch

Fresh is always best!  This mouthwatering brown rice and edamame bowl is not only effortless to put together, but also healthy and  absolutely delicious.  Don't miss out on this opportunity to make meal prep a breeze!

Ingredients: -Brown rice -Cilantro -Dried cranberries -Edamame -Kalamata olives -Lime juice -Olive oil -Pine nuts -Red pepper flakes

STEP 1: TOAST THE PINE NUTS & PREPARE THE DRESSING - Toast the pine nuts in a pan for 1-2 minutes and keep them aside. (optional step) - In a bowl, mix lime juice and olive oil to make the dressing.

STEP 2: ADD INGREDIENTS TO A  BOWL - In a bowl, add brown rice, cilantro, dried cranberries, edamame, and Kalamata olives. - Drizzle the dressing over the ingredients and toss gently. - Top with toasted pine nuts for an added crunch. - Sprinkle with red pepper flakes for a little heat. -One last toss and you are all set!

You can portion the salad into mason jars or lunch containers for a quick grab-and-go lunch!  Bon Appétit!
