Raw Cauliflower Salad Recipe (Gluten-Free + Nut-Free)

This Raw Cauliflower Salad Recipe is a great clean salad that's gluten-free and nut-free. If you're looking for cauliflower recipes this one is great for lunch and dinner.

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 2 tomatoes, diced
  • 1/2 cup parsley, chopped 
  • 1/2 cup coriander, chopped 
  • 1/2 cup dried cranberries 

Dressing

  • 3-4 tbsp olive oil
  • 1 tbsp white wine vinegar or apple cider vinegar
  • 1/2 tsp garlic powder
  • Salt and pepper to taste 

Instructions

  1. Place the cauliflower florets in a food processor, and blitz for about 30 seconds, or until you get a couscous or rice appearance. Add to a bowl.

  2. Add the tomatoes, parsley, coriander, and cranberries to the bowl with the cauliflower rice and give a quick toss to combine.

  3. For the dressing, add all the ingredients in a jar with a tight-fitting lid, and shake until well combined.

  4. Add the dressing to the salad and toss well to combine all ingredients.

  5. Set aside for a few minutes for the cauliflower to absorb the yummy dressing. Enjoy!

Pro Tips:

  1. You can also make this salad ahead of time, just cover it with saran wrap, refrigerate it, and serve it later or the next day. Be sure to keep the dressing separate.

  2. To store leftovers, add them to a sealed container for about 2 days in the refrigerator for optimum freshness.

  3. For a perfect picnic idea, just layer all ingredients into a mason jar, shake, and enjoy!

  4. Do not use frozen cauliflower for this dish, it will end up in a mushy mess.
