Delicious & Easy Greek Chickpea Salad Recipe

Ingredients

  • 1 Can (15oz) chickpeas, drained
  • 1 Cup tomatoes, diced
  • 1 Cup cucumber, diced
  • 1/2 Cup kalamata olives, pitted and halved
  • 1/2 Cup parsley, chopped

Dressing

  • 3 Tbsp olive oil
  • 3 Tbsp lemon juice
  • 1/2 Tsp ground oregano
  • salt and pepper to taste

Instructions

  1. Add the chickpeas, tomatoes, cucumbers, kalamata olives, and parsley in a medium bowl and set aside.

  2. For the dressing, add all the ingredients in a jar with a tight-fitting lid, and shake until well combined.

  3. Add the dressing to the salad and toss well to combine all ingredients. Indulge immediately!

Pro Tips:

  1. You can also make this salad ahead of time, just cover it with saran wrap, refrigerate it, and serve it later or the next day. Be sure to keep the dressing separate.

  2. To store leftovers, add them to a sealed container for about 2 days in the refrigerator for optimum freshness.

  3. For a perfect picnic idea, just layer all ingredients into a mason jar, add dressing, shake, and enjoy!

  4. I love doubling this recipe, so I have lunch for a couple of days!
