Cauliflower and Almond Bites

Baked cauliflower and almond bites recipe with under 10 ingredients.  Everyone will love these easy, healthy, crispy, and low-carb cauliflower and almond bites!

Ingredients

THE BITES

  • 1 medium cauliflower head (chopped into bite-size pieces, about 4 cups)
  • 1/2 cup almonds (ground)
  • 1 tablespoon ground cumin
  • 1/2 tablespoon ground coriander
  • 1 teaspoon salt
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 2 flax eggs (2 tablespoons ground flax + 6 tablespoons water)
  • 3 tablespoons coconut flour

The Sauce

  • 4 tablespoons tahini paste
  • 6 tablespoons water
  • 2 tablespoon lemon juice
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

The Bites

  1.  Preheat the oven to 375 F. and line a baking sheet with parchment paper.

  2. Add the cauliflower florets to a food processor and pulse until they’re blended but still have a grainy texture.

  3. Combine the cauliflower, ground almonds, cumin, coriander, salt, garlic, parsley, flax eggs, and coconut flour in a medium bowl, stirring well.

  4. Form the mixture into 15 small falafel-sized balls.

  5. Place the balls on the baking sheet and bake for 20 minutes, until they’re parbaked.

  6. Add the balls to an air-fryer at 330 F. for 15 minutes, until they’re crispy and cooked on the inside.

The Sauce

  1. In a small bowl, add the tahini, water, lemon juice, garlic, and salt, and whisk until you get a smooth paste. Serve bites with the sauce.

Recipe Notes

*These can be fried, baked, or cooked in an air fryer.  I prefer to parbake them in the oven and then air fry them.  The air fryer gives these bites a crispy top.  If you do not have an air fryer, you can broil them for 5-7 minutes in the oven.
