Ingredients
1Can(15oz) chickpeas, drained
1Cuptomatoes, diced
1Cup cucumber, diced
1/2Cupkalamata olives, pitted and halved
1/2Cupparsley, chopped
Dressing
3Tbspolive oil
3Tbsplemon juice
1/2Tspground oregano
salt and pepper to taste

Instructions
Add the chickpeas, tomatoes, cucumbers, kalamata olives, and parsley in a medium bowl and set aside.
For the dressing, add all the ingredients in a jar with a tight-fitting lid, and shake until well combined.
Add the dressing to the salad and toss well to combine all ingredients. Indulge immediately!
Pro Tips:
You can also make this salad ahead of time, just cover it with saran wrap, refrigerate it, and serve it later or the next day. Be sure to keep the dressing separate.
