The Night Before
Whisk together garlic powder, onion powder, mustard powder, soy sauce, brown sugar, fresh ginger, and black pepper in a medium bowl until combined.
Cut the tofu block in half and slice each half into 4 slices.
Stack tofu slices in a deep pan so that the marinade can penetrate and generously coat each slice.
Place onion rings on top of tofu slices, then pour marinade over them.
Seal pan and let tofu marinate overnight in fridge.
The Day Of
Preheat oven to 350 degrees F.
Remove tofu from marinade (but be sure to save marinade and onions) and arrange onto an oiled sheet or baking pan with at least ¼ inch between each piece.
Bake tofu until browned on the outside (about 30-35 minutes), rotating the pan halfway through.
Strain marinade.
Whisk in cornstarch or arrowroot powder while still cold, then transfer to a small saucepan and bring to a simmer to thicken just slightly.
In a large pan, sauté onions in olive oil until translucent and slightly browned, stirring frequently.
Combine tofu with sautéd onions and thickened marinade.
