As a vegan household, my family always has tofu and avocados on hand, and I am always coming up with new recipes that incorporate both ingredients. The two are actually the perfect combination in terms of nutrition and texture!
Preheat oven to 400 degrees F.
Line a baking sheet with parchment paper and lightly brush with oil. Set aside.
Drain and press tofu, then cut into 2-inch cubes.
In a small bowl, combine soy sauce, maple syrup, sesame oil, onion powder, garlic powder, nutritional yeast flakes, and cumin, mixing well.
Brush marinade on tofu slices and allow to marinate for 20 minutes.
Meanwhile, prepare the avocado sauce by adding cilantro, parsley, onion, garlic, olive oil, lemon juice, avocado, and salt to a high-speed blender or food processor and process until smooth.
Place baked tofu slices onto a baking sheet and brush with oil.
Bake for 30 minutes, turning over halfway through.
Serve tofu topped with avocado sauce.
