Baked Tofu & Avocado Sauce

As a vegan household, my family always has tofu and avocados on hand, and I am always coming up with new recipes that incorporate both ingredients. The two are actually the perfect combination in terms of nutrition and texture!

Ingredients 

  • 1 pound super-firm tofu
  • 2 tablespoons tamari sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon roasted sesame oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon nutritional yeast flakes
  • 1/2 teaspoon cumin powder
  • 1 cup cilantro leaves
  • 1/2 cup fresh parsley
  • 2 tablespoons onion, (chopped)
  • 3 cloves garlic, (minced)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 medium avocado, (pitted)
  • Salt, (to taste)

Instructions 

  • Preheat oven to 400 degrees F. 
  • Line a baking sheet with parchment paper and lightly brush with oil. Set aside. 
  • Drain and press tofu, then cut into 2-inch cubes.
  • In a small bowl, combine soy sauce, maple syrup, sesame oil, onion powder, garlic powder, nutritional yeast flakes, and cumin, mixing well.
  • Brush marinade on tofu slices and allow to marinate for 20 minutes. 
  • Meanwhile, prepare the avocado sauce by adding cilantro, parsley, onion, garlic, olive oil, lemon juice, avocado, and salt to a high-speed blender or food processor and process until smooth.
  • Place baked tofu slices onto a baking sheet and brush with oil.
  • Bake for 30 minutes, turning over halfway through. 
  • Serve tofu topped with avocado sauce.
