Baked Tofu & Avocado Sauce
As a vegan household, my family always has tofu and avocados on hand, and I am always coming up with new recipes that incorporate both ingredients. The two are actually the perfect combination in terms of nutrition and texture!

Ingredients
- 1 pound super-firm tofu
- 2 tablespoons tamari sauce
- 1 tablespoon maple syrup
- 1 teaspoon roasted sesame oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon nutritional yeast flakes
- 1/2 teaspoon cumin powder
- 1 cup cilantro leaves
- 1/2 cup fresh parsley
- 2 tablespoons onion (chopped)
- 3 cloves garlic (minced)
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 medium avocado (pitted)
- Salt (to taste)
Instructions

Preheat oven to 400 degrees F.

Line baking sheet with parchment paper and lightly brush with oil. Set aside.

Drain and press tofu, then cut into 2-inch cubes.

In small bowl, combine soy sauce, maple syrup, sesame oil, onion powder, garlic powder, nutritional yeast flakes, and cumin, mixing well.

Brush marinade on tofu slices and allow to marinate for 20 minutes.

Meanwhile, prepare the avocado sauce by adding cilantro, parsley, onion, garlic, olive oil, lemon juice, avocado, and salt to high-speed blender or food processor and process until smooth.

Place baked tofu slices onto baking sheet and brush with oil.

Bake for 30 minutes, turning over halfway through.

Serve tofu topped with avocado sauce.
