A good stir fry is a family favorite -- broccoli is my kids’ favorite vegetable and my husband loves all Indian flavors, and this dish has both. I love making a stir fry because it’s so quick, and the vegetables are crunchy and packed with nutrients. I often serve this dish with dal or chana masala; it’s great as a side dish or a main dish!

Ingredients
2cupsbroccoli, (blanched, cut into small florets)
1shallot, (finely chopped)
2tablespoonsshredded coconut
1/2teaspoonmustard seeds
1/2teaspooncumin seeds
2sprigscurry leaves
Salt, (to taste)
1tablespooncooking oil
Instructions
Heat pan with oil, temper mustard seeds and cumin seeds, and let splutter for a few minutes.
Add in curry leaves and saute.
After a few seconds, add chopped onion and saute until onions are translucent and light brown.
Add broccoli and salt, then stir fry on medium heat until soft and cooked.
Turn off the heat, then sprinkle shredded coconut and combine well.
