Broccoli Stir Fry

A good stir fry is a family favorite -- broccoli is my kids’ favorite vegetable and my husband loves all Indian flavors, and this dish has both. I love making a stir fry because it’s so quick, and the vegetables are crunchy and packed with nutrients. I often serve this dish with dal or chana masala; it’s great as a side dish or a main dish!

Cook Time: 10 minutes

Ingredients 

  • 2 cups broccoli, (blanched, cut into small florets)
  • 1 shallot, (finely chopped)
  • 2 tablespoons shredded coconut
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 2 sprigs curry leaves
  • Salt, (to taste)
  • 1 tablespoon cooking oil

Instructions 

  • Heat pan with oil, temper mustard seeds and cumin seeds, and let splutter for a few minutes.
  • Add in curry leaves and saute.
  • After a few seconds, add chopped onion and saute until onions are translucent and light brown.  
  • Add broccoli and salt, then stir fry on medium heat until soft and cooked.
  • Turn off the heat, then sprinkle shredded coconut and combine well.
