Broccoli Stir Fry
Broccoli Stir Fry
A good stir fry is a family favorite -- broccoli is my kids’ favorite vegetable and my husband loves all Indian flavors, and this dish has both. I love making a stir fry because it’s so quick, and the vegetables are crunchy and packed with nutrients. I often serve this dish with dal or chana masala; it’s great as a side dish or a main dish!
Ingredients
- 2 cups broccoli, (blanched, cut into small florets)
- 1 shallot, (finely chopped)
- 2 tablespoons shredded coconut
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 2 sprigs curry leaves
- Salt, (to taste)
- 1 tablespoon cooking oil
Instructions
- Heat pan with oil, temper mustard seeds and cumin seeds, and let splutter for a few minutes.
- Add in curry leaves and saute.
- After a few seconds, add chopped onion and saute until onions are translucent and light brown.
- Add broccoli and salt, then stir fry on medium heat until soft and cooked.
- Turn off the heat, then sprinkle shredded coconut and combine well.

This recipe looks wonderful…but it is not allowing me to Pin the recipe to my broccoli board. Also, is there a substitute for curry leaves…doubtful I will find that at my grocery store.

Thanks. Glad you like there recipe. You can use bay leaves instead of curry leaves or just leave them our. Curry leaves however do add in intense flavor. Re how to pin the recipe. Just click on Pinterest botton. Enjoy!
