I call these little desserts "clouds" because they're so soft and fluffy yet also moist, truly melting in your mouth. Super-easy and quick to make, these are great after-school snacks or after-dinner desserts. I just love the combination of chocolate, cardamom, and cayenne!

Ingredients
3/4cupcoconut flour
1/4cupcocoa powder
1/2cupmaple syrup
1/2cupalmond milk, (unsweetened)
1teaspoonpure vanilla extract
1/4cupcacao nibs
1/4teaspoonground cardamom
1/4teaspoonground cinnamon
1/8teaspooncayenne pepper, (optional)
1/4teaspoonsalt
1/4cupshredded coconut
Instructions
In a large bowl, mix all ingredients EXCEPT shredded coconut to create a uniform dough mixture.
Allow mixture to sit for 2 minutes.
Pour the shredded coconut into a small bowl.
Scoop out 1 tablespoon dough mixture with hands and roll to form a small ball.
Repeat until the dough mixture is gone.
Roll each ball in shredded coconut and set aside.
Let rest for a few minutes, then enjoy fresh or chilled.
