Chocolate Coconut Clouds

I call these little desserts "clouds" because they're so soft and fluffy yet also moist, truly melting in your mouth. Super-easy and quick to make, these are great after-school snacks or after-dinner desserts. I just love the combination of chocolate, cardamom, and cayenne!

Ingredients 

  • 3/4 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup almond milk, (unsweetened)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup cacao nibs
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper, (optional)
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut

Instructions 

  • In a large bowl, mix all ingredients EXCEPT shredded coconut to create a uniform dough mixture.
  • Allow mixture to sit for 2 minutes.
  • Pour the shredded coconut into a small bowl.
  • Scoop out 1 tablespoon dough mixture with hands and roll to form a small ball.
  • Repeat until the dough mixture is gone.
  • Roll each ball in shredded coconut and set aside.
  • Let rest for a few minutes, then enjoy fresh or chilled.
