Chocolate Coconut Clouds

I call these little desserts "clouds" because they're so soft and fluffy yet also moist, truly melting in your mouth. Super-easy and quick to make, these are great after-school snacks or after-dinner desserts. I just love the combination of chocolate, cardamom, and cayenne!

Ingredients

  • 3/4 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup almond milk (unsweetened)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup cacao nibs
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut

Instructions

  1. In large bowl, mix all ingredients EXCEPT shredded coconut to create uniform dough mixture.
  2. Allow mixture to sit for 2 minutes.
  3. Pour shredded coconut into small bowl.
  4. Scoop out 1 tablespoon dough mixture with hands and roll to form small ball.

  5. Repeat until dough mixture is gone.
  6. Roll each ball in shredded coconut and set aside.
  7. Let rest for few minutes, then enjoy fresh or chilled.
