These vegan chocolate truffles are incredibly easy to make, very sweet, and very satisfying. I try to make them whenever I have some free time on my hands, and then I store them in the fridge so that whenever my kids ask for something sweet or need a little snack between meals, I can offer these truffles and know I'm feeding them something nutritious!

Ingredients
1cupalmonds
2tablespoonsunsweetened cocoa powder
1cupMedjool dates, (pitted, chopped)
1teaspooncoconut oil
1teaspooncacao nibs
Salt
Instructions
Place almonds, cacao powder, and salt in a food processor and pulse to break down almonds.
Add dates, coconut oil, and cacao nibs, then pulse until the mixture starts to clump.
Roll mixture into 1-inch balls and serve immediately or store in an airtight container for up to 2 weeks in the refrigerator or up to 1 week at room temperature.
