Cucumber & Hummus Toast

We are a savory breakfast kind of family, and this one is loaded with whole grains, vegan protein, greens, and vegetables. It’s super-easy to make because you don't even have to turn on the stove or oven -- it's a true breakfast (or snack) of champions!

Ingredients

  • 1 slice whole grain bread
  • 2 tablespoons hummus
  • 1/4 cup arugula (or micro greens)
  • 1/4 English cucumber (thinly sliced)
  • 4-5 caper berries
  • 3 cherry tomatoes (sliced)
  • Cracked black pepper

Instructions

  1. Toast bread, making sure it’s well-toasted and super crisp. I prefer Mestermacher or Feldkamp bread!

  2. Spread hummus on toasted bread.

  3. Layer toast evenly with arugula or micro greens.

  4. Top evenly with cucumbers.

  5. Layer caper berries and cherry tomatoes.

  6. Crack some black pepper over the whole thing and serve.
