Poha is an Indian snack and breakfast dish made with flattened rice. It is delicious and naturally gluten-free.

Ingredients
1medium yellow onion, chopped, (red onion will work as well)
1medium tomato, chopped
1green chili, chopped, (optional)
¼cupcilantro leaves, chopped
3tablespoonspeanut or olive oil
½cuppeanuts, raw
1tablespoonblack mustard seeds
3curry leaves
½tablespoonturmeric powder
½cupgreen peas, fresh or frozen
2cupspoha, (flattened rice)
2tablespoonslemon juice
Salt to taste
1lime, sliced
Instructions
Chop onion, tomato, chili, and cilantro leaves and set aside.
In a skillet, on medium low heat, add the peanut or olive oil and the raw peanuts. Cook until golden brown (about 2-3 minutes), then remove peanuts from the pan and set aside. I like to put them on a paper towel to absorb any extra oil.
Add black mustard seeds and curry leaves to oil and fry on medium low heat until they start to crackle.
Add the chopped onion and chili and cook until onions start to become translucent; go ahead and season with salt and the turmeric powder
Add the chopped tomato and peas and cook for an additional 4-5 minutes.
In the meantime, lightly wash and drain poha in cold water. (Do not leave poha in water for too long as it is very delicate!)
Go ahead and add the poha and peanuts to the pan with veggies, then gently stir to combine all the ingredients. Cook on low heat for about 5-7 minutes.
Remove from the heat and let it sit for 2-3 minutes.
Gently stir in lemon juice and cilantro leaves, and garnish with a lime wedge.
Pro Tips & Meal Prep Ideas
When preparing poha it is best not to over soak, or it will turn out very mushy.
Poha is best served fresh, however, if you must reheat it, put a wet paper towel on the poha and heat it in the microwave until heated through. Guaranteed to come out soft using this trick.
Leftover poha can be stored in an airtight container in the refrigerator for about 2-3 days.
Press poha between your index finger and thumb, if it breaks down easily it is ready.
Poha tastes great with a cup of hot chai or cappuccino.
A great side compliment to this dish would be some fresh seasonal fruit, or a green salad.
