Preheat the oven to 350 degrees.
Add parchment paper to a loaf pan and set aside.
In a large mixing bowl add the dry ingredients, (spelt flour, coconut sugar, shredded coconut, baking powder, baking soda, and cinnamon). Whisk well.
Add the wet ingredients (orange juice, oil, and vanilla extract) to the dry ingredients, and mix well to ensure everything is well combined.
Transfer the mixture to the loaf pan, making certain you get every bit of it!
Bake for 20-25 minutes. Stick the toothpick in the middle of the loaf to ensure it comes out completely clean and the loaf cake is golden and firm.

Have a nut lover in your family? Feel free to add ½ cup of your favorite chopped nuts to add a crunchy texture.
Love chocolate. Add ½ cup of chocolate chips and cut down coconut sugar to ¼ cup.
