Ingredients
2cupsall-purpose flour
1teaspoonground cinnamon
1teaspoonground ginger
1teaspoonbaking soda
1/2teaspoonsalt
2cupsfrozen mango chunks, (defrosted, or 2 fresh mangoes)
1cupsugar
1/2cupsunflower oil
1tablespoonapple cider vinegar
1/2cupgolden raisins
Powdered sugar
Instructions
Preheat oven to 350 degrees F.
Coat an 8-inch baking pan with cooking spray.
Whisk together flour, cinnamon, ginger, baking soda, and salt in a bowl.
Puree mangoes.
In a bowl, whisk mangoes, sugar, sunflower oil, and vinegar.
Stir in flour mixture, mix well, and fold in raisins.
Spread batter in prepared baking pan.
Place pan in the middle rack of oven until a toothpick inserted in center of cake comes out clean (about 35 minutes).
