Mango Spice Cake

I just love dessert, and I love it even more when it's a little bit healthy. This cake is spicy and sweet and totally vegan, packed with delicious nutrients.

Ingredients 

  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups frozen mango chunks, (defrosted, or 2 fresh mangoes)
  • 1 cup sugar
  • 1/2 cup sunflower oil
  • 1 tablespoon apple cider vinegar
  • 1/2 cup golden raisins
  • Powdered sugar

Instructions 

  • Preheat oven to 350 degrees F.
  • Coat an 8-inch baking pan with cooking spray.
  • Whisk together flour, cinnamon, ginger, baking soda, and salt in a bowl.
  • Puree mangoes.
  • In a bowl, whisk mangoes, sugar, sunflower oil, and vinegar.
  • Stir in flour mixture, mix well, and fold in raisins.
  • Spread batter in prepared baking pan.
  • Place pan in the middle rack of oven until a toothpick inserted in center of cake comes out clean (about 35 minutes).
  • Cool on a wire rack for 2 hours.
  • Dust on powdered sugar before serving.
