Roasted Broccoli

This easy, 3 ingredients roasted broccoli with garlic is a perfect side dish and truly irresistible!

Ingredients

  • 1 bunch broccoli (about 1 ½ pounds, cut into florets)
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic (sliced)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.

  2. Bring a large pot of water to a rapid boil, then add a heaping tablespoon of salt.

  3. Add the broccoli florets and cook until crisp and tender (about 1-1 ½ minutes).

  4. Remove florets with a slotted spoon and plunge them immediately into ice water.

  5. In a medium bowl, toss the blanched broccoli florets with olive oil, garlic, salt, and pepper.

  6. Spread the now blanched and seasoned broccoli onto the baking sheet and roast, without stirring, until the edges are crispy and the stems are tender (about 10 minutes).
