Spicy Guacamole with Corn

My super-secret guacamole recipe was just too good not to share. This is a foolproof recipe, and the simple ingredients are very flavorful. I prefer ripe avocados, so I purchase them 2-3 days before I want to make the guac, then I leave them on the kitchen counter to ripen. We can never have enough of this guac!

Ingredients

  • 1/2 medium red onion (diced)
  • 1/2 jalapeno pepper (seeded, minced, optional)
  • 4 cherry red tomatoes (diced)
  • 1/4 cup cilantro (chopped)
  • 1 clove garlic (minced)
  • 1/4 cup corn
  • 1 lime (juiced)
  • 1/2 teaspoon himalayan salt
  • 1/2 teaspoon roasted cumin (ground)
  • 2 Haas avocados (halved, seeded, peeled)

Instructions

  1. In large bowl, add all ingredients EXCEPT avocados.
  2. Mix well and let mixture sit for 2 minutes.  
  3. Add avocados and mash using potato masher or back of fork.
  4. Mix well and serve immediately with corn chips. This can be refrigerated for up to 2 hours.
