This salad is the perfect summertime lunch meal or dinner appetizer, or even a picnic! I love adding sweet berries to the tangy kale and topping it all with crunchy nuts.

Ingredients
4-5cupskale, (finely chopped)
1cupstrawberries, (sliced)
1cupblackberries
1/2cupblueberries
1/2cupraspberries
1/2cupmango, (diced)
1/4cupalmonds, (slivered)
1/4cupwalnuts, (halved)
3tablespoonsapple cider vinegar
2tablespoonsdijon mustard
2tablespoonsagave syrup
3tablespoonsolive oil
Salt and pepper, (to taste)
Instructions
In a small bowl, whisk together apple cider vinegar, mustard, honey, salt, and pepper until combined.
Slowly stream in olive oil while whisking until emulsified.
In a large bowl, combine kale and dressing.
Massage dressing into the kale until coated and place in the fridge to marinate for few minutes.
While kale is marinating, chop fruit.
Add fruits and nuts to kale and toss until evenly combined.
