This is one of my family’s favorite side dishes -- the crispy string beans with lemon zest and cranberries really hit the spot! Plus, the mix of fresh flavors makes it feel like a true summer dish.

Ingredients
1poundgreen beans, (ends trimmed)
1tablespoonextra virgin olive oil
1large garlic clove, (minced)
1lemon, (zest)
1tablespooncranberries
Salt, (to taste)
Instructions
In a large stock pot of well-salted boiling water, blanch green beans until bright green in color and tender-crisp (about 1 minute).
Drain and shock in a bowl of ice water to stop the cooking process.
In a large heavy skillet, heat oil and garlic over medium heat, sauteing until fragrant (about 30 seconds).
Add beans and continue to saute until coated in butter and heated through (about 5 minutes).
Add lemon zest and cranberries, then season with salt and pepper.
