Sweet & Salty String Beans

This is one of my family’s favorite side dishes — the crispy string beans with lemon zest and cranberries really hit the spot! Plus, the mix of fresh flavors makes it feel like a true summer dish.

Ingredients 

  • 1 pound green beans, (ends trimmed)
  • 1 tablespoon extra virgin olive oil
  • 1 large garlic clove, (minced)
  • 1 lemon, (zest)
  • 1 tablespoon cranberries
  • Salt, (to taste)

Instructions 

  • In a large stock pot of well-salted boiling water, blanch green beans until bright green in color and tender-crisp (about 1 minute). 
  • Drain and shock in a bowl of ice water to stop the cooking process.
  • In a large heavy skillet, heat oil and garlic over medium heat, sauteing until fragrant (about 30 seconds). 
  • Add beans and continue to saute until coated in butter and heated through (about 5 minutes). 
  • Add lemon zest and cranberries, then season with salt and pepper. 
  • Serve immediately.
