Sweet & Salty String Beans

This is one of my family’s favorite side dishes -- the crispy string beans with lemon zest and cranberries really hit the spot! Plus, the mix of fresh flavors makes it feel like a true summer dish.

  • 1 pound green beans (ends trimmed)
  • 1 tablespoon extra virgin olive oil
  • 1 large garlic clove (minced)
  • 1 lemon (zest)
  • 1 tablespoon cranberries
  • Salt (to taste)


  1. In a large stock pot of well-salted boiling water, blanch green beans until bright green in color and tender-crisp (about 1 minute). 

  2. Drain and shock in a bowl of ice water to stop the cooking process.

  3. In a large heavy skillet, heat oil and garlic over medium heat, sauteing until fragrant (about 30 seconds). 

  4. Add beans and continue to saute until coated in butter and heated through (about 5 minutes). 

  5. Add lemon zest and cranberries, then season with salt and pepper. 

  6. Serve immediately.
