These Waffled Hash Browns from my dear food blogger friend Community Kitchen in Atlanta are the definition of southern comfort food. My kids and I are just thrilled that we found a way to make them vegan -- using olive oil instead of butter!

Ingredients
3large russet potatoes, (peeled, shredded)
1tablespoonlemon pepper
1/2tablespoonsalt
1/2tablespoonmelted butter, (or olive oil if making vegan)
Instructions
Preheat the waffle iron to medium-high.
Add shredded potatoes to a colander and press excess liquid from potatoes using a potato masher.
Transfer shredded potatoes to a large bowl and toss with lemon pepper and salt.
Brush both sides of the waffle iron with melted butter (or olive oil if making vegan).
Add a mound of potatoes to each section of waffle iron.
Close the iron, pressing lightly, and cook until crispy and golden brown (about 10-12 minutes).
