Waffled Hash Browns

Waffled Hash Browns from Community Kitchen
These Waffled Hash Browns from my dear food blogger friend Community Kitchen in Atlanta are the definition of southern comfort food. My kids and I are just thrilled that we found a way to make them vegan -- using olive oil instead of butter!
Ingredients
- 3 large russet potatoes, (peeled, shredded)
- 1 tablespoon lemon pepper
- 1/2 tablespoon salt
- 1/2 tablespoon melted butter, (or olive oil if making vegan)
Instructions
- Preheat the waffle iron to medium-high.
- Add shredded potatoes to a colander and press excess liquid from potatoes using a potato masher.
- Transfer shredded potatoes to a large bowl and toss with lemon pepper and salt.
- Brush both sides of the waffle iron with melted butter (or olive oil if making vegan).
- Add a mound of potatoes to each section of waffle iron.
- Close the iron, pressing lightly, and cook until crispy and golden brown (about 10-12 minutes).
- Serve immediately.
