These Waffled Hash Browns from my dear food blogger friend Community Kitchen in Atlanta are the definition of southern comfort food. My kids and I are just thrilled that we found a way to make them vegan -- using olive oil instead of butter!

  • Cook Time: 12 minutes
  • Total Time: 22 minutes

  • 3 large russet potatoes (peeled, shredded)
  • 1 tablespoon lemon pepper
  • 1/2 tablespoon salt
  • 1/2 tablespoon melted butter (or olive oil if making vegan)


  1. Preheat the waffle iron to medium-high.

  2. Add shredded potatoes to a colander and press excess liquid from potatoes using a potato masher.  

  3. Transfer shredded potatoes to a large bowl and toss with lemon pepper and salt.  

  4. Brush both sides of the waffle iron with melted butter (or olive oil if making vegan).  

  5. Add a mound of potatoes to each section of waffle iron.  

  6. Close the iron, pressing lightly, and cook until crispy and golden brown (about 10-12 minutes).

  7. Serve immediately.
