This summer salad just screams “Happy August!” I came up with this salad recipe because I had some cut-up cucumbers, peppers, and watermelon – a staple in our house in August -- in the fridge, plus some leftover cucumber juice, so I mixed all of it and added some shallots and herbs. Of course, I also had to add some jalapeño for heat, and viola! A great summer salad.

Ingredients
2cupsfresh watermelon juice
1/2cupfresh cucumber juice
1/2cupcucumber, (peeled, seeded, diced)
1/4cupred bell pepper, (small, diced)
1cupwatermelon, (cut into small cubes)
2tablespoonsshallot, (minced)
1/2teaspoonjalapeno, (seeded, minced)
3tablespoonsfresh mint, (thinly sliced)
1tablespoonred wine vinegar
2tablespoonslime juice
1/2teaspoonflaky sea salt
Instructions
In a juicer, separately juice watermelon and cucumber.
In a mixing bowl, add juices, cucumber, bell pepper, watermelon, shallot, jalapeño, mint, and vinegar, stirring gently to mix all ingredients.
Add a squeeze of lime and sprinkle of sea salt before serving.
