Watermelon Cucumber Salad

This summer salad just screams “Happy August!” I came up with this salad recipe because I had some cut-up cucumbers, peppers, and watermelon – a staple in our house in August -- in the fridge, plus some leftover cucumber juice, so I mixed all of it and added some shallots and herbs. Of course, I also had to add some jalapeño for heat, and viola! A great summer salad.

Ingredients

  • 2 cups fresh watermelon juice
  • 1/2 cup fresh cucumber juice
  • 1/2 cup cucumber (peeled, seeded, diced)
  • 1/4 cup red bell pepper (small, diced)
  • 1 cup watermelon (cut into small cubes)
  • 2 tablespoons shallot (minced)
  • 1/2 teaspoon jalapeno (seeded, minced)
  • 3 tablespoons fresh mint (thinly sliced)
  • 1 tablespoon red wine vinegar
  • 2 tablespoons lime juice
  • 1/2 teaspoon flaky sea salt

Instructions

  1. In a juicer, separately juice watermelon and cucumber.

  2. In a mixing bowl, add juices, cucumber, bell pepper, watermelon, shallot, jalapeño, mint, and vinegar, stirring gently to mix all ingredients.

  3. Add a squeeze of lime and sprinkle of sea salt before serving.
