Watermelon Cucumber Salad

This summer salad just screams “Happy August!” I came up with this salad recipe because I had some cut-up cucumbers, peppers, and watermelon – a staple in our house in August -- in the fridge, plus some leftover cucumber juice, so I mixed all of it together and added some shallots and herbs. Of course, I also had to add some jalapeño for heat, and viola! A great summer salad.

Ingredients

  • 2 cups fresh watermelon juice
  • 1/2 cup fresh cucumber juice
  • 1/2 cup cucumber (peeled, seeded, diced)
  • 1/4 cup red bell pepper (small, diced)
  • 1 cup watermelon (cut into small cubes)
  • 2 tablespoons shallot (minced)
  • 1/2 teaspoon jalapeno (seeded, minced)
  • 3 tablespoons fresh mint (thinly sliced)
  • 1 tablespoon red wine vinegar
  • 2 tablespoons lime juice
  • 1/2 teaspoon flaky sea salt

Instructions

  1. In juicer, separately juice watermelon and cucumber.

  2. In mixing bowl, add juices, cucumber, bell pepper, watermelon, shallot, jalapeño, mint, and vinegar, stirring gently to mix all ingredients.

  3. Add squeeze of lime and sprinkle of sea salt before serving.
