Ingredients

extra virgin olive oil

fresh lemon juice

kosher salt

tabasco

freshly ground pepper

seedless watermelon
,
(8-10 pounds)
1 1/4
cups
kalamata olives
,
(pitted, coarsely chopped)

cup
mint leaves
,
(coarsely chopped)
Instructions
Using a melon baller, scoop watermelon into little balls.
In a large bowl, whisk oil, lemon juice, salt, tabasco, and pepper.
Add watermelon and olives and toss gently.
Garnish with chopped mint leaves and serve immediately.
