Watermelon & Olive Salad

Ingredients
- 1/3 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons kosher salt
- 1 teaspoon tabasco
- 1/2 teaspoon freshly ground pepper
- 1 seedless watermelon (8-10 pounds)
- 1 1/4 cups kalamata olives (pitted, coarsely chopped)
- 1 cup mint leaves (coarsely chopped)
Instructions

Using melon baller, scoop watermelon into little balls.

In large bowl, whisk oil, lemon juice, salt, tabasco, and pepper.

Add watermelon and olives and toss gently.

Garnish with chopped mint leaves and serve immediately.
