Green Bean & Potato Stir Fry
A quick stir fry of green beans and potatoes with some Indian spices is a delicious and healthy vegetable dish, ready in under 30 minutes! My kids love this combination and often go for seconds. Green beans are available all year round, so this dish is quite regular in our house.
Ingredients
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 2 large potatoes, (diced)
- 3 cups green beans, (chopped into 1/2-inch-long pieces)
- 1/3 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt, (to taste)
Instructions
- Heat oil in skillet and add cumin seeds.
- When seeds start sputtering, add diced potatoes and fry until slightly brown (2-3 minutes).
- Add chopped green beans, turmeric, and coriander powder to skillet and mix well.
- Cover skillet with a lid and cook until potatoes and beans are cooked (about 10 minutes).
- Add salt and mix well, then sprinkle garam masala powder on top.
- Mix everything well and cook for 2 minutes.
- Serve with roti or naan.
