Yes, paella is a Valencian rice dish traditionally made with meat and seafood, but it is the saffron, tomato and rice base that makes it paella. Our Vegan and Vegetarian Paella uses chickpeas or black beans for protein and contains lots of vegetables, making it fully vegan.
Short-grain rice is best because it absorbs lots of liquid without turning mushy. Spanish bomba or calasparra rice are the traditional choices, but you could also use Arborio in a pinch. Our Vegan and Vegetarian Paella uses short-grain brown rice for extra fiber.
Gazpacho is a cold, blended soup from Andalusia in southern Spain, traditionally made with ripe tomatoes, cucumber, peppers, garlic, olive oil and vinegar. To make white sangria, simply combine a bottle of white wine with sliced citrus, fresh fruit and herbs, then chill it for a few hours so the flavors meld together.
