Frequently Asked Questions

Make a quick broth with soy sauce, toasted sesame oil, mirin and a touch of sugar, then cook your ramen noodles and stir-fry vegetables like carrots, red peppers and broccoli. Combine everything and top with scallions. Our Veggie Ramen with Mirin takes about 20 minutes and works with buckwheat ramen noodles for a gluten-free option.

Great vegetarian ramen toppings include scallions, tofu, bok choy, mushrooms, corn, bean sprouts, sesame seeds, nori and a drizzle of chili oil. Vegetarians who eat eggs often add a soft-boiled egg for protein as well. My Miso Bok Choy is also a delicious topping that can be added to a bowl of Veggie Ramen.

A good stir fry sauce balances salty, sweet, sour and spicy. For a Korean-style sauce, whisk gochujang with soy sauce, rice vinegar, sriracha and a little boiling water to loosen it. That’s the sauce we use in our Korean Tofu Vegetable Stir Fry. Meanwhile, for a nutty option, try the peanut sauce in our Broccoli Tofu Stir Fry.

Korean cooking has plenty of vegetable-forward dishes, from stir-fried vegetables and tofu to banchan side dishes and bibimbap rice bowls. Gochujang, a spicy fermented chili paste, gives many of them their signature heat. Check out our Korean Tofu Vegetable Stir Fry with Gochujang Sauce, which is ready in 20 minutes.

Traditional miso soup is usually not vegan because the broth is made with dashi, a stock that contains bonito fish flakes. However, it’s easy to make vegan by using vegetable broth instead. Our Vegan Miso Soup with Tofu and Vegetables uses vegetable broth, white miso, ginger and lemongrass for a broth that is just as complexly flavored but completely vegan.
