When the cold nights set in and I’m preparing dishes for holiday tables, I always find myself reaching for warm, hearty vegetarian winter recipes.

These dishes rely on winter staples like root vegetables, Brussels sprouts, squash, beans and citrus, and of course they are also delicious.

My hearty vegetarian chili and rice and parsnip and herb soup are both classics on a cold day, with the soup getting its creamy texture from coconut milk instead of dairy.

For easy sides, make a big tray of roasted root vegetables or tangy sautéed Brussels sprouts. And when it’s time to entertain, simmer a pot of mulled wine and slice a blood orange loaf cake. Browse more of my winter recipes below.
