Banana Bread with Nuts & Figs
Watch out, this banana bread is like no other and won’t last long in your house! You will want to bake it again and again but you won’t feel guilty about it because it doesn’t have any oil and is low in sugar. The secret ingredient in this bread is unsweetened applesauce, which makes it super moist and sweet. I also like to add figs, a natural sugar, to further sweeten the bread and walnuts for the crunch factor.
Ingredients
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 2 tablespoons ground flaxseed
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 1 1/2 cups overly ripe pureed banana, (about 4 bananas)
- 1/3 cup pure maple syrup
- 1/2 cup almond milk
- 1/2 cup unsweetened applesauce
- 1 teaspoon pure vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup chopped figs
Instructions
- Preheat oven to 350 degrees F and prepare the loaf pan by greasing it with a tiny bit of coconut oil or oil spray.
- In a small bowl, mix all dry ingredients (flour, flaxseed, baking soda, cinnamon, salt).
- In a larger bowl, prepare pureed bananas by mashing them with a fork.
- Add syrup, almond milk, applesauce, and vanilla to the banana, then mix well.
- Add dry ingredients and mix until just incorporated.
- Mix in walnuts and figs.
- Pour into bread loaf pan.
- Bake until a toothpick inserted in the center comes out clean (about 50-60 minutes).
- Let cool on a cooling rack for at least 15 minutes before turning out of the bread pan, then serve.
