Arugula & Strawberry Salad

I just love the crunchiness and pepperiness of arugula mixed with the sweetness of strawberries. This salad is the perfect balance of crunchy and sweet, with lots of other textures in the mix. Perfect for summer!

Ingredients 

Salad

  • 4 cups baby arugula
  • 1 cup strawberries, (sliced)
  • 1/4 cup radishes, (sliced)
  • 1/2 avocado, (peeled, pitted, diced)

Dressing

  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon whole grain mustard
  • Salt and pepper, (to taste)

Instructions 

  • In a large salad bowl, mix the arugula, strawberries, radishes, and avocado.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, mustard, salt, and pepper.
  • Pour the dressing over the salad and toss to coat, then serve immediately.
