Baked Cauliflower & Potatoes

Cauliflower and potatoes are such a great combination. I love to make this dish -- it takes about 10 minutes to put together, and then I let it sit in the oven for about 30 minutes while I work on dal, rice, or naan, which go great with this dish. My kids love the bright yellow color of the turmeric with the bright green color of the peas and cilantro.

Ingredients 

  • 1 large cauliflower head, (washed & cut into bite-sized florets)
  • 1 pound potatoes, (peeled, washed & cut into 1-inch pieces)
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 2 inches fresh ginger, (peeled & grated)
  • 1 tablespoon ground cumin
  • 1 teaspoon ground turmeric powder
  • 1 teaspoon garam masala
  • 1/4 cup water
  • 1 handful fresh cilantro leaves, (chopped)

Instructions 

  • Preheat oven to 400 degrees F.
  • In a large bowl, mix all ingredients except cilantro leaves.  
  • Line a cookie sheet with baking paper and bake mixture for 25-30 minutes, stirring halfway through so potatoes and cauliflower roast evenly.
  • Serve immediately with cilantro garnish on top.
