Chocolate Banana Bread
Who doesn't love a good loaf of banana chocolate chip bread? Take a few extra steps to make it vegan and you've got yourself one healthy dessert!
Ingredients
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- 1 1/2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1 tablespoon cinnamon
- 1/2 teaspoon allspice
- 2 bananas, (ripe, mashed)
- 3 tablespoons vanilla extract
- 1/4 cup coconut oil, (melted)
- 1/2 cup light brown sugar
- 1/3 cup almond, (soy or oat milk)
- 1/2 cup cacao nibs
- 1/2 cup vegan chocolate chips
Instructions
- Preheat oven to 375 degrees F.
- Grease an 8x4 bread pan with ½ teaspoon of coconut oil.
- Whisk ground flax and water and let it sit on kitchen counter for 15 minutes.
- In a large mixing bowl, combine all dry ingredients – flour, baking powder, sea salt, cinnamon, and allspice.
- In a separate mixing bowl, combine mashed bananas, vanilla, oil, sugar, milk, and ground flax mixture. Mix well.
- Add banana mixture to bowl of dry ingredients.
- Combine well and fold in chocolate chips and cacao nibs.
- Transfer mixture to a greased bread pan.the
- Bake in the center rack of the oven for 50-55 minutes.
- Allow bread to cool fully before cutting into slices.
