Chocolate Banana Bread
Who doesn't love a good loaf of banana chocolate chip bread? Take a few extra steps to make it vegan and you've got yourself one healthy dessert!

Ingredients
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- 1 1/2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1 tablespoon cinnamon
- 1/2 teaspoon allspice
- 2 bananas (ripe, mashed)
- 3 tablespoons vanilla extract
- 1/4 cup coconut oil (melted)
- 1/2 cup light brown sugar
- 1/3 cup almond (soy or oat milk)
- 1/2 cup cacao nibs
- 1/2 cup vegan chocolate chips
Instructions

Preheat oven to 375 degrees F.

Grease 8x4 bread pan with ½ teaspoon of coconut oil.

Whisk ground flax and water and let it sit on kitchen counter for 15 minutes.

In large mixing bowl, combine all dry ingredients – flours, baking powder, sea salt, cinnamon, and allspice.

In separate mixing bowl, combine mashed bananas, vanilla, oil, sugar, milk, and ground flax mixture. Mix well.

Add banana mixture to bowl of dry ingredients.

Combine well and fold in chocolate chips and cacao nibs.

Transfer mixture to greased bread pan.

Bake in center rack of oven for 50-55 minutes.

Allow bread to cool fully before cutting into slices.
