Who doesn't love a good loaf of banana chocolate chip bread? Take a few extra steps to make it vegan and you've got yourself one healthy dessert!

Ingredients 

  • 1 tablespoon ground flax seeds
  • 3 tablespoons water
  • 1 1/2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon cinnamon
  • 1/2 teaspoon allspice
  • 2 bananas, (ripe, mashed)
  • 3 tablespoons vanilla extract
  • 1/4 cup coconut oil, (melted)
  • 1/2 cup light brown sugar
  • 1/3 cup almond, (soy or oat milk)
  • 1/2 cup cacao nibs
  • 1/2 cup vegan chocolate chips

Instructions 

  • Preheat oven to 375 degrees F.
  • Grease an 8x4 bread pan with ½ teaspoon of coconut oil.
  • Whisk ground flax and water and let it sit on kitchen counter for 15 minutes.
  • In a large mixing bowl, combine all dry ingredients – flour, baking powder, sea salt, cinnamon, and allspice.
  • In a separate mixing bowl, combine mashed bananas, vanilla, oil, sugar, milk, and ground flax mixture. Mix well.
  • Add banana mixture to bowl of dry ingredients.
  • Combine well and fold in chocolate chips and cacao nibs.
  • Transfer mixture to a greased bread pan.the
  • Bake in the center rack of the oven for 50-55 minutes.
  • Allow bread to cool fully before cutting into slices.
