Ingredients 

  • 3 zucchini, (1/2 pound each)
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • Freshly ground black pepper
  • 1 1/2 ounces reduced-fat soft goat cheese
  • 1 tablespoon parsley leaves, (minced)
  • 1/2 teaspoon lemon juice
  • 2 cups baby spinach leaves
  • 1/3 cup basil leaves

Instructions 

  • Slice zucchini into 1/4-inch slices lengthwise.
  • Discard the outermost slices and brush the rest with olive oil on both sides.
  • Season with salt and pepper.
  • Place zucchini on a preheated grill or grill pan until tender on each side (about 4 minutes).
  • In a small bowl, combine goat cheese, parsley leaves, and lemon juice, mashing with a fork.
  • Put 1/2 teaspoon of cheese mixture about 1/2 inch from the end of one zucchini slice.
  • Top cheese mixture with a few spinach leaves and 1 small basil leaf (or 1/2 large one).
  • Roll up the zucchini slice and place on a platter, seam side down.
  • Repeat with the rest of the slices until complete, then serve immediately.
