Grilled Zucchini Roll-Ups

Are your kids as ravenous after school as mine are? Keep after-school snacktime healthy and easy with these quick and nutritious grilled zucchini roll-ups. It's a great way to sneak in some vegetables and healthy dairy into their diets!

  • 3 zucchini (1/2 pound each)
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • Freshly ground black pepper
  • 1 1/2 ounces reduced-fat soft goat cheese
  • 1 tablespoon parsley leaves (minced)
  • 1/2 teaspoon lemon juice
  • 2 cups baby spinach leaves
  • 1/3 cup basil leaves


  1. Slice zucchini into 1/4-inch slices lengthwise.

  2. Discard outermost slices and brush rest with olive oil on both sides.

  3. Season with salt and pepper.
  4. Place zucchini on preheated grill or grill pan until tender on each side (about 4 minutes).
  5. In small bowl, combine goat cheese, parsley leaves, and lemon juice, mashing with fork.
  6. Put 1/2 teaspoon of cheese mixture about 1/2 inch from end of one zucchini slice.

  7. Top cheese mixture with few spinach leaves and 1 small basil leaf (or 1/2 large one).

  8. Roll up zucchini slice and place on platter, seam side down.

  9. Repeat with rest of slices until complete, then serve immediately.
