No-Bake Granola Bars
These no-bake granola bars are super easy to make and great snacks or grab-and-go breakfasts on busy mornings. We even have them for dessert sometimes, too! They’re gooey, crunchy, sweet, and salty. We’ve also been taking them along on hikes too, along with some Mixed Grain Granola and Homemade Trail Mix. If you make these and take them on a hike, just make sure you eat them before setting out -- they’re not baked and don’t have any additives, so they won’t hold their shape or firmness in the summer heat.
Ingredients
- 1 cup pitted dates
- 1/4 cup maple syrup, (or agave)
- 1/4 cup almond butter
- 1 1/2 cups rolled oats or gluten-free oats
- 1 cup roasted almonds, (roughly chopped)
- 1/2 teaspoon fleur de sel, (to taste)
- 1/4 cup dark chocolate chips
- 1/4 cup dried cranberries, (to taste)
- 1/4 cup dried figs, (chopped)
- 1/4 cup dry shredded coconut
Instructions
- Place dates in the bowl of a food processor fitted with a metal blade, then process until there’s dough-like consistency.
- Add dates, liquid sweetener, and almond butter in a medium bowl, stirring and blending well.
- Add rolled oats and almonds, mixing well to combine.
- When blended, add chocolate chips, cranberries, coconut, figs, and salt, mixing well to blend completely.
- Line an 8x8 baking dish or casserole dish with parchment paper or plastic wrap.
- Spoon mixture into prepared dish and use slightly moistened fingers to press down to make an even layer.
- Cover the mixture with plastic wrap and place in freezer for at least 15 minutes to harden.
- Once the mixture is very firm to the touch, remove it from the dish and cut it into serving-sized portions.
- Store in an airtight container at room temperature or store in the freezer as individually wrapped pieces.
