Quinoa Veggie Fried Rice
Have some leftover quinoa and rice in your refrigerator, or just want to add some protein to your fried rice and make it healthy? This recipe is super easy to make and is a satisfying and filling side dish. You will never go back to regular fried rice after having this!
Ingredients
- 1 cup brown rice, (cooked)
- 1 cup tri-color quinoa, (cooked)
- 1 tablespoon peanut oil
- 2 tablespoons peanuts
- 1/2 cup frozen corn kernels
- 1/2 cup frozen peas
- 2 inches ginger root, (finely grated)
- 2 tablespoons raisins
- 2 tablespoons soy sauce or tamari
Instructions
- Heat skillet over medium-high heat and add oil.
- Add peanuts and cook until brown (about 2-3 minutes).
- Add corn, peas, raisins, and ginger, and sauté until vegetables are cooked through (about 5-7 minutes).
- Add rice and quinoa and stir fry well until rice and quinoa are fully combined and hot (about 5-7 minutes).
- Stir in soy sauce or tamari and serve.
