Blistered Mini-Sweet Peppers

I have been seeing these petite peppers in grocery stores more and more lately, and I was attracted to their vibrant colors, so I started buying them, cooking them up, and serving them with drinks, tapas-style! They are healthy, clean, and super-easy to make -- need I say more?

Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients 

  • 2 tablespoons olive oil
  • 1/2 pound mini-sweet peppers
  • Truffle or sea salt

Instructions 

  • Heat oil in large skillet over high heat until just smoking.
  • Add peppers and cook, tossing occasionally, until skins are blistered and flesh is softened (about 4 minutes).
  • Transfer to bowl and sprinkle with salt, tossing to coat.
  • Serve immediately.
