Blistered Mini-Sweet Peppers
I have been seeing these petite peppers in grocery stores more and more lately, and I was attracted to their vibrant colors, so I started buying them, cooking them up, and serving them with drinks, tapas-style! They are healthy, clean, and super-easy to make -- need I say more?
Ingredients
- 2 tablespoons olive oil
- 1/2 pound mini-sweet peppers
- Truffle or sea salt
Instructions
- Heat oil in large skillet over high heat until just smoking.
- Add peppers and cook, tossing occasionally, until skins are blistered and flesh is softened (about 4 minutes).
- Transfer to bowl and sprinkle with salt, tossing to coat.
- Serve immediately.

I have made this recipe several times. I, however, add sweet onions and cherry tomatoes. I also add one (1) Jalapeño to add a little heat. Toss with sea salt, pepper and garlic powder. Delicious.
